Saturday afternoon, 5pm, B decides it is time to get the curry started for dinner. She had planned a lovely fragrant tikka masala with fluffy rice and some … random vegetables of some sort… It was with great surprise that B found that she had not taken any meat out of the freezer that morning. It was a dangerous time of deciding on having take-away {we had already had lunch out} or eggs on toast {not again} or make something new {eep!}.
After about a minute of googling, inspiration hit.
Here is what she made…
Curry With Eggs & Rice…
Cooking Time: 30mins
Serves: 6
Difficulty: Pretty easy!
Ingredients
12 hard boiled eggs {or two for each person}
2 cups of dry rice – cooked
2 brown onions
2 large carrots
1 capsicum
1 tbs olive oil
1 knob of butter
1 teaspoon of ginger
3 cloves of garlic
2 tbs Tikka Paste
2 cans of peeled tomatoes
1 can of lentils or chickpeas or both
1 chicken stock cube
Salt and pepper
Sour cream or greek yoghurt for serving
Method
I am a BIG fan of chopping, I LOVE it! In another life, I was in training to be a chef and my knife skills were really great. BUT – I did not have three children who think that every night is an episode of ‘MasterChef’. Now, I just don’t have as much time, so I have been using this little beauty to help me with the chopping part of lots of recipes.
1) Put your rice on to cook.
2) Put the eggs on to boil.
3) Put oil and butter into a pan that is on a medium heat.
4) Put onions and carrots into the food processor and pulse until chopped finely. Add these to the pan.
5) Put capsicum into the food processor and pulse until chopped finely. Add these to the pan also.
6) Cook these off until the onion is translusent and fragrant.
7) Add the ginger, garlic and tikka paste. Stir and cook until you can really smell all the spices.
8) Add the peeled tomotoes, stock cube and lentils or chickpeas. Allow to cook away slowly bubbling for about 15 minutes. If the curry looks too dry, add some water.
9) Peel the eggs and check that the rice is cooked.
10) Spoon rice out onto the plates, arranged halved eggs on the outside of the rice, then pile up the vegetable curry. Add a big dollop of sour cream on top.
11) Enjoy!
Variations…
- You can use other curry pastes, korma or the like would be totally yummy!
- This is one of those recipes that you can sneak lots of vegetables into: try zucchini, pumpkin, broccoli, sweet potato etc…
