Food: B’s Bacon & Onion Brunch Muffins {Sugar Free}

I made these muffins on Sunday morning. Everyone was sick here and I just wanted to make something wholesome and homemade and … from my heart. I do not like seeing my people sick…

I have a bit of a ‘thing’ about muffins: muffins are not cake. They should NOT be light and fluffy – they should have some density. When I go out for morning tea, 90% of the time I opt for scones over a muffin for the simple reason that if I wanted to eat cake, I would order cake… I don’t get huffity about many things, but I do about muffins – go figure…

So, these are my Brunch Muffins. Perfect for a late breakfast or afternoon tea or a lunch box filler. They have no sugar and are deliciously easy!

 

Preparation Time: 20 mins

Cooking Time: 20 – 25 mins

Serves: Makes 12 BIG muffins

 

Ingredients

175g bacon, roughly chopped

1 onion

1 cup peas

 

2 cups plain flour

2 tsp baking powder

 

150g vintage cheddar

2 eggs

100ml cream

200ml milk

3tbs olive oil

Salt & Pepper

 

Method

1. Preheat your oven to 200 degrees Celcius. Grease a 12 cup muffin tray – really well.

2. In a food processor, blitz the bacon, onion and peas until really finely chopped

3. Sift the flour and baking powder into a bowl.

4. Grate the cheese.

5. In a separate bowl, mix the eggs, cream, milk, oil and salt & pepper. Make a well in the flour and pour the liquid in. Mix until JUST combined, then add the bacon mixture and the cheese and mix gently again – but not too much – we don’t want cake! {If the mixture looks too dry, add a splash more milk – but the mixture should be dense enough that you have to scrape it off a spoon}

6. Spoon the mixture into the muffin tray and pop them into the oven.

7. Clean up your bench tops, make some coffee and lay out the Sunday papers while they cook.

8. They are cooked when they spring back after touching the top – you could use a skewer too – but it should not come out TOTALLY clean…

9. As soon as they come out of the oven, start gently releasing them from the muffin tray… Because of the cheese, they will stick a bit. Use a knife to just ease them away from the side and bottom of the pan.

10. Serve with coffee, in the sunshine with people you love who are wearing pajamas…

 

Variations…

This recipe is just so versatile… you can add so many different flavour combinations!

Like:

  • Feta, sun dried tomatoes and capsicum
  • Bacon, corn, onion and cheese
  • Bacon, olives, onion, capsicum
  • Ham, pineapple, sun dried tomatoes, pizza herbs
  • Ham, camembert, onion
  • Ham, basil and … some other fancy cheese….
  • You get the idea!

  5. I’ve never made savoury muffins – I only think of them as sweets. But I can see with this recipe they might be a bit like a quiche? Think I’m willing to give them a go.

  7. I’m a huge fan of bacon in most things, but I don’t think I could do it in a muffin sorry.
    In fact, I think the should be another word. Because muffins are like cake.
    This should be…. Something else! I can understand the frustration.

    • Yes, it really does make it easier! I am going to make some little ones and freeze them for lunches. The girls seemed to like them – so that could be another sugar free thing that I am able to give them. Very hard to pack a lunch without lots of sugar, or is that just me?
